Sabor Cubano, a collection of recipes by some of Cuba’s artists and paladar owners, will be released at Cuba’s Feria del Libro held from February 11-21 in the Fortress San Carlos La Cabaña.
Edited by Mexican Patricia Belatti Cabrera, with photos by Ignacio Nacho Urquiza (estudiourquiza.com), and supported by Mexico’s Casa Lamm (casalamm.com.mx) Sabor Cubano combines the favourite recipes of writers and artists — including writer Leonardo Padura, artist Roberto Fabelo, and musician Aldo López-Gavilán — who have provided the recipes for the book and how to make their favourite dishes.
Recipes from 10 of Havana’s top paladars (private restaurants), such as recipes from Doña Eutimia and Mamá Inés, also appear in the book, published by Mexico’s Ambar Diseño, and with a prologue by Old Havana’s city historian Dr. Eusebio Leal Spengler.
Cuba’s Book Fair also sees the launch of another Cuba recipe book Sabor Gibara by chef Alberto Gámez Ronela, who has collected the recipes of different traditional dishes from the seaside town of Gibara. These include Jaibita Rellena (stuffed crab) and La sopa con Música (rice and coquina mollusc soup). The soup with la coquina must rate as one of Cuba’s tastiest dishes. Gámez Ronela has frequently cooked for VIPs at Gibara’s Festival de Cine Pobre (next showing April 2016).
